Sopa de Albondigas (Mexican Meatball Soup)
INGREDITENTS:
1 large white onion
1 head of garlic
1 small can of tomato sauce
1 bunch of cilantro
1 cup of rice
2 large eggs
2.5lbs of ground beef
1 tsp of ground cumin
Salt to taste
Preferred veggies (quantity up to you, I used 3 long carrots, 1 large zucchini, and 3 red potatoes)
INSTRUCTIONS:
-On medium heat place a pot filled halfway with water, ¼ onion, 1 clove of garlic, and a pinch of salt. We want to bring to a slow boil.
-On the side begin making the sauce for the meat and the sauce for the broth
-BEGIN WITH THE MEAT SAUCE:
¼ onion
½ can of tomato sauce
3 cloves of garlic
Handful of cilantro with stem
1tsp ground cumin
2 eggs
Blend until smooth
-PREPARE THE MEATBALLS:
In a bowl mix 2.5lbs of ground beef with ½ cup of uncooked rice. Once rice is evenly distributed, begin to add the meat sauce little by little for best coverage/consistency.
Form large meatballs according to your LO’s age/BLW guidelines and place into the pot of boiling water
Set and forget for 10min while we prepare the broth sauce
-PREPARE THE BROTH SAUCE
½ tomato sauce
2 cloves of garlic
¼ onion
Pinch of salt
Blend until smooth
-Remove floating onion and garlic used in the beginning of this process. (Leaving the onion in for longer than this will change the taste of the broth.)
-Wait 10min – use this time to taste test, add salt if necessary (optional) and remove excess oil from ground beef that floats to the top (optional)
-Add veggies (cut pieces according to BLW guidelines based on LO’s age), broth sauce, and ½ cup of rice
-Cover, leave on medium heat, and cook for 20-25min
-ENJOY!
NOTES:
Depending on the veggies used, you may need to add some in sooner/later than the rest according to cooking time. (i.e. carrots take longer to cook than zucchini therefore I tend to add the zucchini in 10min after I add in the carrot and potato)
The meatballs won’t break apart so long as the water has reached a high temp so make sure not to place in prematurely into cold water
DO NOT stir the meatballs, they should cook for a MINIMUM of 40min in total and will begin floating/moving on their own
Depending on your LO’s age and allergies you can substitute the tomato sauce with a 1-2 medium tomato(s)
Use salt and cumin at your discretion based on personal preference and LO’s age/dietary needs

INGREDIENTES:
1 cebolla blanca grande
1 cabeza de ajo
1 lata pequeña de salsa de tomate
1 manojo de cilantro
1 taza de arroz
2 huevos grandes
2.5 libras de carne molida
1 cucharadita de comino molido
Sal al gusto
Verduras preferidas (la cantidad depende de ti, usé 3 zanahorias largas, 1 calabacín grande y 3 papas rojas)
INSTRUCCIONES:
-A fuego medio coloca una olla llena hasta la mitad con agua, ¼ de cebolla, 1 diente de ajo y una pizca de sal. Queremos llevar a ebullición lenta.
-A un lado empezar a hacer la salsa para la carne y la salsa para el caldo
-COMENZAR CON LA SALSA DE CARNE:
¼ de cebolla
½ lata de salsa de tomate
3 dientes de ajo
puñado de cilantro con tallo
1 cucharadita de comino molido
2 huevos
Mezclar hasta que esté suave
-PREPARAR LAS ALBÓNDIGAS:
En un tazón, mezcle 2.5 libras de carne molida con ½ taza de arroz crudo. Una vez que el arroz esté distribuido uniformemente, comience a agregar la salsa de carne poco a poco para obtener la mejor cobertura/consistencia.
Forme albóndigas grandes de acuerdo con las pautas de edad/BLW de su LO y colóquelas en la olla con agua hirviendo.
Poner y olvidar durante 10min mientras preparamos la salsa caldosa
-PREPARAR LA SALSA DE CALDO
½ salsa de tomate
2 dientes de ajo
¼ de cebolla
Pizca de sal
Mezclar hasta que esté suave
-Retirar la cebolla flotante y el ajo utilizados al inicio de este proceso. (Dejar la cebolla por más tiempo cambiará el sabor del caldo).
-Espere 10 minutos: use este tiempo para probar el sabor, agregue sal si es necesario (opcional) y elimine el exceso de aceite de la carne molida que flota en la parte superior (opcional)
-Agregue vegetales (corte los pedazos de acuerdo con las pautas de BLW según la edad de LO), salsa de caldo y ½ taza de arroz
-Tapa, deja a fuego medio y cocina por 20-25min
-¡DISFRUTAR!
NOTAS:
Dependiendo de las verduras utilizadas, es posible que deba agregar algunas más temprano o más tarde que el resto según el tiempo de cocción. (es decir, las zanahorias tardan más en cocinarse que los calabacines, por lo tanto, tiendo a agregar los calabacines 10 minutos después de agregar la zanahoria y la papa)
Las albóndigas no se romperán mientras el agua haya alcanzado una temperatura alta, así que asegúrese de no colocarlas prematuramente en agua fría.
NO revuelvas las albóndigas, deben cocinarse por un MÍNIMO de 40 minutos en total y comenzarán a flotar/moverse por sí solas.
Dependiendo de la edad y las alergias de su LO, puede sustituir la salsa de tomate con 1-2 tomates medianos
Use sal y comino a su discreción según las preferencias personales y la edad/necesidades dietéticas de LO
