Also I used to sauté spring mix and eat as a side for dinner too. With your shakes try adding some spinach and sprouts. The way I used to make my shakes were: pour a splash of my daughter’s juice (typically apple) into a blender then add a handful or two of spinach, some sprouts and blend (I added the juice to help blend the leaves better). Once that was blended I’d add any fresh fruit I had, and lastly I’d add frozen fruit. I would make it before I went to work and pop it in the freezer when I got to work. I ate my oatmeal and had my coffee at my desk at 8am. Then about 10am I’d take my shake out and drink it over time. If I’d forgo and took it out later I’d sip on what I could and drink water while waiting for it to thaw more. All my patients would say how it looked disgusting bc it was green and you could see small chips of leaves and sprouts in it but it wasn’t bitter due to the fruit. And you can always play around with it and add extra green and sprouts to it if needed.
Diet looks pretty good overall. I’d cut the corn bc when it processed it turns to sugar. And I’d consider cutting the rice due to the carbs. Increase your water to a gallon a day. Using a cup with a straw tends to help you drink more. Need to add more good fats. I used to make sautéed veggies using coconut oil and gee butter to cook them in. My got to veggies were yellow squash, zucchini, onions, and mushrooms with a little seasoning. My breakfast for my previous wt loss journey was low carb or keto bread with a layer of guacamole topped with Colby Jack cheese and toasted. Then when I got burned out on that I ate one pack of oatmeal. And of course I had coffee with both. I also add mat coconut oil to my coffee to get more good fat. The coconut oil and avocado helps add the good fats to your diet. For snack also try fresh fruit, raw veggies, cheese cubes, nuts. I personally found that I did better by snacking throughout the day instead of eating a lunch.
