Black bean corn salad
1 can rinsed black beans
1/2-1 can rinsed garbanzo beans
1 12 oz bag grilled corn(I get frozen at Safeway)
4 diced tomatoes
1/2 red onion diced
1/2 bunch cilantro
Mix following ingredients in large bowl:
1/4 Cup vinegar (any)
3 tablespoons vegetable oil
1 tsp salt
1 tsp sugar
1 tsp cumin
1 tsp chili powder
1/2 tsp paprika
1 tsp black pepper
Add beans and vegetables serve at room temp or chilled.
Favorite summer salad to bring to bbq, really fresh against heavy meats or other mains 😁
