I just made goat cheese nachos with carnitas. Both carnitas and cheese log from Costco. Topped with pico de gallo and I opened a little guacamole cup for dipping. I personally like those Asian salad mixes with some chicken (usually leftover or from rotisserie) and I add a little peanut butter to the dressing and those thin rice noodles (vermicelli cause they cook in minutes). Trader Joe’s has some a good vegan creamy mushroom soup. I’ll use hummus in my sandwich instead of mayo. I’ll eat a lot of oatmeal and meat based heavy meals.
