My daughter is 18 months and allergic to eggs. I’m researching recipes but it has so much sugar in them. Can anyone recommend any they have tried?

I’ve seen people substitute eggs for bananas! I made ‘carrot cake muffins’ with grated carrot and apple, mashed banana and some flour!

You can also make a “flaxseed egg” or “chia seed egg” and substitute this for the egg in the recipe. I’ve done this for oat / flapjack type bars and muffins when we’ve had no eggs in and it works well! For flaxseed I do around 2.5-3 tablespoons of water to 1 tablespoon milled flaxseed per egg. You need to mix it and leave it for 5 minutes and it’ll thicken into a gel type consistency. Then just use it the same as you would an egg. Hope this helps 🩷

I’ve heard you can use applesauce to substitute egg in recipes 😊 not sure if it works on every recipe out there but should be fine for muffins

My son has an egg allergy and we typically use apple sauce, banana or flax seed when cooking or if I’m out of those, his plant based “egg”. We typically do scrambled “egg” with the “Just Egg Plant Based Egg” found on the refrigerated section by the eggs at the grocery store. Looks weird to me but does scramble up super well and looks close enough to scrambled eggs.

Aquafaba is the best for baking, it's the water that comes with chickpeas in a can, you can whip it like egg whites x

I find using banana instead of eggs in muffin work great and give some sweetness without sugar.

@Tasha I’ve purchased this before to make eggs for her and they actually aren’t bad tasting. However, I’ve never used it to make anything else with because I wasn’t sure how it would turn out.

@Mariam to be honest I just winged the recipe🤣one grated carrot, one grated apple, 1-2 mashed bananas (depending on size), wee dash of vanilla (optional), add flower until it gets to a ‘cake batter’ consistency then put into silicone cupcake tray/moulds and baked in the oven at 180c for about 15-20 minutes (basically just checked the middle was cooked with a metal skewer)❤️
