I think Leo and Leopole will be Shortened so i’d go Sonny Leo
One thing I consider is how many syllables are in the last name. If 3+, I'd go with a shorter middle name (Ray). Only 1-2 and a longer middle name flows well with it

Sonny Leo or sonny Raymond, I'm not keen on sonny ray as just makes me think of sun ray but entirely up to you, you might like that as in a cute way as he will clearly be your little ray of sunshine regardless.
