Banana puree

I made banana mash/puree the other day in bulk because I bought to many bananas. I put it in an ice cube tray and have frozen it. Buts gone a dark brown colour after a few days is that normal? Or am I being stupid ? I've loads of other frozen veg and finger foods in the freezer and they are fine

Bananas really don’t last long as purée. I think there’s some technical science behind it 🤷‍♀️

Try chopping into slices, freeze on a tray then once frozen transfer into a food bag and back in the freezer. They last much longer and I just defrost a few and mash them up with a fork.
