Gestational diabetes and pancakes

So pancake day is approaching! It’s also my birthday, I have Gestational diabetes and was wondering if there’s a way I can join in without causing too much of a blood sugar spike? Anyone got any ideas or recipes? Thanks

What about banana pancakes in place of an egg and without the sugar?

That’s true but they have flour in them which is high in carbs, 2 ingredient banana pancakes are ok but I tend to turn them into scrambled banana eggs 😂

Google some keto pancake or keto crepe recipes. Obviously the aim of keto is to be low carb so that’s probably the easiest way to have some ‘guilt free’!

Use almond flour, no sugar, instead of syrup put Greek yogurt and berries on top, OR make a savoury pancake… which is also nice… with the almond flour base, cheese, add an egg and salad on top… I’ve made the almond flour pancakes several times and eating a load of them without sugar spiking… just make sure not to add sugar and be creative with your toppings

I used the recipe, minus the maple syrup and added cinnamon and stuff ☺️ topping was Greek yogurt and berries https://www.bbcgoodfood.com/recipes/almond-flour-pancakes

I have GD too. Boo 👎🏻 😫 Was thinking savoury could be a good shout OR pair a chocolate pancake with a heavy protein and veg meal?

Limit your portion and have a protein like bacon, you can buy zero sugar maple syrup. I’d go for a crepe style rather than American

Oat pancakes... Banana pancakes.... But also you could make wholemeal pancakes?

Use wholemeal flour and pair it with fruit and yoghurt instead of all the sugary stuff. It's hard for me too, it's my fav day of the year and I've been craving them for a week now with all the sugar. If I do have one I take myself for a walk.
