I'm hoping for a bit of inspiration into different easy slow cooker meals please ☺️
Between both me and hubby working late (me part time self employed) and a fussy 2 year old that's decided bed time is just not for him I need some inspo on healthy(ish) and easy as anything slow cooker meals if anyone's got any of their faves you wouldn't mind sharing ☺️

Turkey mince chilli con carne with bits of bacon and taco beans. Creamy chicken soup with sweet corn ( I use a vegan rice base cream. I m not vegan but I like it . Can use light cream too). Minestrone ( I put onions, tomatoes, carrots, lentils and beans, potatoes or whatever veggies I have like broccoli then add pasta or orzo ). Also chicken noodle soup with ginger and garlic or a classic one with parsley if you don’t like ginger. Nice beef stew i do too. Pork and apple joint. Curry noodle soup with chicken.

This one’s a favourite in our house 🤤 also things like beef stew/brisket and chicken curry work great in a slow cooker too! I tend to just use about 1/3 less liquid than I would on the stovetop and just let it simmer away all day ☺️

I love making shredded chicken tacos in the slow cooker 😍 Also any curries really - I prefer to use chicken thighs on the bone and leave it on low all day long and then when you go to shred it, they fall off the bone 🤤🤤

Slow Cooked diced beef stew with 4 big thick carrots an 1 whole red oion and a 2 table spoons of red wine and half a pint of cold warter and 100ml of beef gravy granuals and same with onion gravy granules meat goes in raw wine will reduce over the course of the day start either lunch time or 3pm and leave in slow cooker for up to 5 hours and best served with crusty bread and butter 😋

I just made a huge minestrone soup - great to get all your veg but also so comforting!
