My 5 week old is drinking around 3-5 ounces per feed and feeding every 2-3 hours. I’m concerned they are overeating but they are showing clear hunger signs. Is this too much formula for my baby? Or should I just feed formula based of my babies want?

No that sounds like a good amount. If LO is hungry feed them.
If they aren’t throwing up you aren’t overfeeding. They’ll let you know when they’re full.

Try paced bottle feeding! I was told that newborns will suckle as a natural reflex so sometimes with bottle feeding they will keep drinking even after they are full. If they habitually overeat, their tummy’s can stretch and they will keep needing more and more.
As well make sure it’s a slow flow nipple, if the milk comes out too fast their little brains will not communicate they are full quick enough.
With paced bottle feeding it mimics breastfeeding by letting them control the pace, take breaks when necessary (as they would be able to with nursing) and gives their brains time to let them know when they are full. I would say stop after 3 ounces of paces bottle feeding and check for full ques - relaxed hands and body, turns head away from bottle l, closes mouth and generally content.
