The Pyrenees: there are lots of lakes and a few waterfalls if you're used to hiking with your child. For example, I've never been to the Gavarnie cirque, but I've heard it's very beautiful. There's also Le lac d'oo, an hour's walk from the car park. You can climb a little higher to Lac d'Espingo and you can bivouac or sleep at the refuge. The centre of France with the Auvergne volcanoes (the puy de Sancy, the puy de dôme, the puy de pariou, ...) less impressive than the Pyrenees but good and perhaps more accessible with a baby, there's a train to get to the top of the Puy de dome. The Cantal if you want to see the deep countryside.
I love the Basque country: Biarritz, saint jean de luz, the rhunes train, the little villages inland (Sare: there's a village festival the second week in September, saint jean pied de port).
Haute Savoie with the town of Annecy.
The calanques of Marseille and Cassis. The Verdon, Ardèche and Tarn gorges, and the Arcachon basin. I've always wanted to go to Brittany and Mont Saint Michel.
Here are a few ideas if they help. There are lots of other places to see maybe more interesting, but this is what comes to my mind.
