Vegetable/protein ideas?

My kids are almost 2 and 3.5, we have always eaten pretty clean, unprocessed foods.. but lately are struggling to get the kids to eat their veggies and proteins.. they just love carbs lol. We do veggie trays in the afternoon and they'll typically eat those, and have started doing air-fryed lentil tofu which they seem to be enjoying. Looking for some more ideas if you have any to share!!? tia 🥰

I made this last night and my toddler loved it. I use lentil or garbanzo pasta instead if wheat. I also added zucchini. You blend it all together so it’s totally hidden 😉 i also found just offering things a slightly different way, like with a fun toothpick or new plate can encourage eating different foods https://www.theppk.com/2013/10/roasted-red-pepper-mac-cheese-video/

I started making chickpea and oat chocolate chip cookies for my boys and they honestly would eat the entire batch if I let them. Definitely take advantage of pasta sauces and put veggies in them! I always hide some veggies in spaghetti sauce. You can also put veggies in things like meatloaf.
