Good hidden veg recipes?

My daughter loves peas and carrots but isn’t that keen on the texture of other veg. Has anyone found good recipes that have hidden veg, especially things that are good to put in lunchboxes for childcare or keep in the fridge to add to meals?

My kid goes nursery but i meal prep snacks and meals for weekend and my day at home with her. And i dont cook from recipes.. but here are some suggestions then can maybe google them and interchange ingredients for veg. I make a lot of muffins/croquettes/potato dippers as these are blended you can kinda add whatever you want to them and keep the ratio of flour, eggs, baking powder the same. Mould and bake in different shapes. Pancakes are also a good one you can do them with spinach or sweet potatoes easily as they are also blended. For meals when i make her tomato based meals i will season roast then blend in red peppers onion carrot and tomatoes. Add it to pasta, or rice with a protein. For her sausage and mash i blend the gravy with onions or shallots and mushrooms. Things like that

I'm out atm so can't post it but there's an annabel carmel hidden veg bolognese sauce recipe and a cheese sauce i think!

We make a pasta sauce by blending any veg you like with a tin of chopped tomatoes (could also use fresh if you preferred I guess!) and then mix it with pasta. It’s one of his favourite dinners and he too would turn his nose up at veg when I put it on his plate. If you eat meat could add chicken etc to it for extra protein x

I made sausage rolls. Sausage meat and grate carrot and courgette into them. Or courgette and peppers, the two veggies I’ve tried so far. They are a winner
