Something I like to make that’s hella easy is ground beef with green beans and a side of rice lol I usually make it the days I work but swap meats if it’s back to back days
I also like lasagna/spaghetti with breadsticks
Lemon chicken with rice and asparagus
Papusas with Spanish rice and beans
Quesadillas with guacamole and salsa

Some meals I make fairly regularly are fettuccine and chicken, meat with a side noodle and/or salad, tacos, hamburger helper, sloppy joes, sometimes I throw things in a dish and call it a casserole lol the other day I took out hamburger and didn't have a plan. Found Alfredo, cream of mushroom soup, mixed all of that, topped with stuffing and finally an unhealthy amount of cheese on top lmao I struggle with coming up with meals too but my family isn't too hard thankfully, if I add noodles, cheese and meat usually everyone is happy lol

Panzanella salad is a weekly dish in our house. It's basically whatever bread has gone stale, plus seasonal veggies, typically topped with chicken or salmon. It's on the table in less than 20 minutes and uses ingredients we likely have in the fridge anyways.

Chat gpt can make meals specific for you and your family and based on what diet needs you guys have! They will even create shopping list and give you cooking directions! I found it useful when cooking for a family of 6 picky eaters

Salsa chicken - so easy, you can add whatever you want and the kids love it.

2-3 chicken breast’s in a crock pot
Big jar of salsa
Cook all day
Shred the chicken
Put over white rice and add “shredded Mexican style cheese” on top

I add corn and black beans to the crock pot. I also mess around with toppings and add sour cream, chives, jalapeños and sometimes eat with tortilla chips.

I’ve been doing different variations of dense bean salads lately. It’s great for my husband to take to work leftovers and it’s minimal cooking. Just have to cook an animal protein and the rest is just chopping and dumping. Also the crockpot is my friend. Makes things a lot easier and faster for me. I go in pinterest and look for recipes I think my family will enjoy to mix it up.

Stir fry’s, one pan sheet meal, spaghetti. I usually like to get creative and use Pinterest or recipes online for inspiration. Lately I’ve been into make my own pasta sauce, naan bread, biscuits, gyoza and egg rolls. Through out the weekly I’ll usually do a meal my partner favors, a meal I favor and then something we all enjoy lol

We have chili most weeks, we also like to add extra beans and corn to it to stretch it further! I like to make some sort of baked chicken once a week with potatoes and I love to make turkey taco rice! It’s just ground turkey, taco seasoning, white rice, corn and cheese!
