Anniversary dinner ideas?

New here! My 1st wedding anniversary is coming up and I love to cook, so I figure I’ll make us a meal! Any suggestions on a chicken dish that’s Jamaican or Caribbean inspired? My husband is African-American and Jamaican and grew up going to St. Lucia on his step-mother’s side and Texas on his dad’s side. So he LOVES a lot of heat and Caribbean flair. Unfortunately, I don’t eat meat as a preference but have no trouble cooking it. I could obviously do a google search for recipes, but wondering if anyone has some simple and authentic ideas!
