If you have a hard time getting her to eat veggies I throw a bunch in the blender with marinara sauce. My son who is two can’t tell the difference.
Also I know this isnt a meal idea but try letting her help in the kitchen. I have found when I let my step daughter (7) help she’s more excited to at least try the food she has made.
Mini Frittata Muffins. Scrambled eggs in noodles. Chicken and blended veg meatballs with spaghetti. Breadcrumb Hollumi chips. Or mash potato bites with mystery fillings!
