I’m really struggling to think of dinner ideas for my little one. A go-to safe dinner is tuna pasta so he has that probably a couple times a week. I’ve found he’s starting to become less adventurous with the food he tries and I think it’s bc I don’t give him a variety, it’s generally same stuff each week, I admit I’ve been so busy with other things that I’ve not had much time to think about recipe ideas for him. He has the certain veg he likes so I’m satisfied that he’s at least getting some good stuff, but just cannot think of meal ideas that are not tuna pasta/pasta dishes or just meat with veg.
My partner and I get gousto most of the time otherwise I’d make dinners that we can share as a family ( the portion sizes of gousto just about split between me and my husband so never any spare for my LO 😂)
Any ideas welcome. Also happy to hear breakfast and lunch ideas too, he’s better with those meals but still interested to hear different options.

Jakobs favourites are: spaghetti and meatballs, Dahl and rice, fish pie and veg, fishcakes, stir fry with noodles, jacket potatoes with Tuna and cheese, Mac and cheese.
Breakfast: super smoothies, Weetabix, porridge, egg and avocado on toast, hash browns, cinnamon rolls, beans on toast
We struggle with lunches though!

I feel that! For dinners she likes quiche, chicken kiev, chicken nuggets and smiley faces, fish fingers, tomato pasta, mini pizza. For lunches she loves scrambled eggs on toast, cheese cream bagel, sausage rolls, ham and cheese sandwich. Breakfast is pancake with fruits and a yogurt 80% of the time. I’m gonna start introducing cereal. I do feel like I’m cycling through the same stuff all the time but I am thankful she is eating at least even if it’s not as varied as I’d like it to be.

Mild curries / dal made with coconut milk go down well with my little one

Beef casserole. - use anything you have that can go in the oven. diced beef, shallots or onions, garlic, celery, carrots and any other veg you want, even potato. Cut everything into 2cm chunks, fry for 5/10 mins. Then add a stock cube and some water, can of tomatoes. Chuck in the oven at 160 for two hours or a slow cooker.
Serve with mash, or if you add potato then serve as is. Easy, takes me 15 mins, beef isn’t chewy because it’s cooked in sauce so is great for them, tastes grand and you know they are getting veg. If you want a more detailed recipe I would recommend the Jamie Oliver beef casserole recipe.
You can make a huge batch, lasts in the fridge, you can also freeze it. 10/10
