Possibly sizing up? I’m using cloth diapers so it may be a little different but a mom friend told me early on that when leaks and blowouts are common it usually means it’s time to size up. I’ve also seen diaper hack to tuck in the extra material around the back to create a little poo pocket but that won’t really help for the sides. Possibly examine how the brand of diaper fits around your baby’s legs too. It could be that the cut or shape is too wide when she sits.

Make sure the ruffle around the leg is fluffed out and the little elastic barrier inside is at her leg

It's not a solution to blowouts, but it would be for the mess, I saw a post where someone used a puppy pad to line the seat. They cut a hole and put the seat belt buckle through.

Sizing up in diapers, but also maybe try a different brand? I received a lot of different diaper brands during my baby shower and have tried pampers, Huggies, parent's choice and now I'm on Amazon mama bear diapers/pampers again. My favorites so far for my son have been pampers and parent's choice, and it gets a bonus star if it has the built in blowout protection on the top back of the diaper. If it didn't, I created the pocket by folding over at the top and it saved me a lot of the time. Occasionally he'll blow out near the legs, but making sure the elastic is out and that the diaper is pulled up around the waist after I get everything in place. When putting him in the swings and high chairs, while not fancy, I've been putting just some doubled up paper towels and he hasn't gone through that yet with the nastiest blowouts. You could also use a rag towel that you don't care about, but the puppy pad in the car seat trick is an ingenious idea that I may be stealing!
