This tropical mango tapioca pudding has total fresh summer vibes!
1 cup sago pearls (tapioca pearls)
2 ripe mangoes, peeled and cubed
1 cup coconut milk
1/4 cup sugar or condensed milk
1 cup water (for sago cooking)
Rinse sago pearls under cold water until the water runs clear. In a pot, bring 1 cup of water to a boil. Add sago pearls and cook for 10-15 minutes, or until translucent. Stir occasionally to prevent sticking. Drain sago and rinse under cold water to stop the cooking process.
In a blender, puree one mango until smooth. Cut the other mango into small cubes.
In a saucepan, combine coconut milk and sugar or condensed milk. Warm over low heat until mixed. Do not boil.
In serving bowls, layer the sago pearls, mango puree, and mango cubes.
Pour the sweetened coconut milk over the top. Chill in the fridge for at least an hour. ENJOY !
Take it up a notch and garnish with mint!

I LOVE mangos but they're rarely ever good here. This seems like a dream!
