Desperate for some advice or meal recipes I'm not sure... I love cooking everything is always homemade, my coming 3 year old was a baby who ate absolutely everything but now he eats such a limited diet it's become a pain to feed him along with everybody else I'm forever cooking 2-3 meals every night and it's just not enjoyable anymore.
For example he loves tuna pasta, roast dinner but won't eat my beautiful roast potatoes! Doesn't like potatoes in general or bread really he will pick out anything in the middle, he loves sausages, pork, steak and chicken as long as it's not heavily seasoned but won't eat minced beef or burgers, he won't eat sauces like bolognese or pesto or curries, rarely will he eat homemade chips/fries, he won't touch rice, he will only eat ham if it's in a sandwich but won't eat the bread, he's gone from eating all the green vegetables and loving it to not wanting to eat them anymore...
I'm just at a bit of a loss really he doesn't like dairy products like cheese either as he had colic and reflux he knows it upsets his belly I'm sure despite becoming less symptomatic when having dairy products
Like what am I actually left with? I mostly just feed him meat and snacks bits he's definitely not unhealthy he's not skinny either but just wish he would enjoy food more

My little boy is very similar to yours. It's hopefully just a phase they go through.

Sounds like hes eating clean at 3 😂 What about casseroles / stews with meat and a selection of veg that are just in a gravy? If he likes tuna try other fish? Does he like eggs? You could make omelette with different fillings. If he likes pasta he might also like noodles?
