Everyone talks about what to pack, but I’m curious about legal papers. Do I need to bring a photo id, what if I don’t have one when I go/don’t have one in general? Do we need to bring or ssn cards? Is there anything like that that we should definitely be packing?

Should definitely bring ID if you have one (though you should always take ID with you if you've got one). Social isn't necessary though.

It helps to know the basic information. Make sure you have your insurance sorted and your id on hand if needed. Everything else happens outside the hospital. Birth certificate and social and such happens after.

Pack your snacks and drink (trust me I have no eat two days during my labor process) if baby born during night, otherwise you can order from there.
bring your own pj for after give birth, one outfit piece clothe for your baby when leaving, your DL or ID card always, and rest of stuff hospital will give you a gift a bag for diapers and recovery postpartum for you.

health insurance and ID

You just need your ID and insurance card
If you don't have an ID card.. get one if you have time!

I didnt bring anything and was fine but they said paperwork would have been easier with my id and insurance card
