I always bring a copy of her birth certificate and a letter with the consent of the father, with his details and contact signed by himself

Not as long as you have her passport :)

I took my daughter to England on holiday and had to take her to A&E because she became so sick. They told me as we don’t share a last name we should always have documentation that I’m her mum as they can’t access the Scottish NHS records. If that can be the case in the UK I would always take documentation in the case you have this issue abroad. You will also need a letter from her dad (signed) saying you can take your baby out the country.
Bonus for me the day after all this malarkey I got engaged so close to having the same surname 🤣
