Start by having him use playdoh to write his name.

What are his interests, use that as a motivation

Just listened to Science Vs podcast's ADHD episode, and the expert they had suggested turning multi step processes into basic "If I (first basic step), then I can (second basic step) and so on. For example "If I can pick up the red crayon, I can color the firetruck. If I color the firetruck, I can grab the green crayon for the grass," etc. For sitting still, my nephew's OT suggested a resistance band tied across the legs of the chair for the kid to kick. There are also inflatable cushions that cause the kid to wobble slightly, giving them constant stimulation that helps channel the nervous energy.

You can practice with paint, sand. You can practice with holding a pencil or crayon. Just take one step at a time
