Has anyone flown with Ryanair or Easyjet with older children and bought car seats onboard instead of checking them in, and were they in a bag or boxed up?

Sorry we always box them and check them in

Usual practice it to check the seat in. I’ve heard of people taking their infant car seat into cabin before but it was small enough to fit into overhead lockers (and it still depends on how much space is available, so quiet flights more likely). If you want your baby to sit in their car seat you have to purchase a seat for them (Ryan air at least allow this, but it needs to be a specific type of car seat)
For checking in you can box, or bag or even hand over as is, but it’s best to wrap it somehow at least
