Most eggs are good for two weeks after their expiration date if that helps any! You could do breakfast for dinner, breakfast casserole, or egg muffins! https://cafedelites.com/breakfast-egg-muffins-3-ways/

Eggs muffins would be great for my husband to take to work! And we have lots of veggies I could put in a casserole 😋 I definitely won’t be throwing them away immediately, I plan to check with water to see when they go bad.
Also boiled eggs/deviled eggs! My hubs loves eggs so we use alot of them 😂
Don't go by the date on eggs, they are generally good for ages after their bbd! Do the float test, fill a jug with water, and put the eggs in, if they float toss them, if they sink they're safe!

Crack eggs on a plate, whisk together, slice of bread dipped into eggs so that both side is coated, fry until golden. 😘
I’ll have to look this up!
Flan, custard, bread pudding, etc are good ways to get rid of eggs if you like sweets. Also quiches...you can do tons of variation, anything from spicy to sweet

Ooooh my husband would love if I made some bread pudding! I’ll look up a recipe
Fried rice, egg in a bread, use an egg wash for friend fish or chicken or in a meatloaf, potatoes salad...we go through a lot of eggs in our house. I normally come home with 3 dozen farm fresh eggs every time I go back home and it’s normally gone in 2 or 3 weeks.

Potato salad!! Yes!
I could probably live off potato salad. But gumbo is one of my favorite foods so that is probably why. Oh and you can put boiled eggs in a stew.
Ooooh those are good ideas!
