I need a good vanilla cake recipe. Im going to attempt to make my son’s first birthday cake myself. I need a good sponge cake recipe that is good for decorating and is soft and will be okay being froze and defrosted. I have never put a cake in the freezer before so any tips on that would be helpful too. How long do I defrost for until I can decorate etc. If anyone can please give me some advice on how I get my buttercream so smooth around my base and If Im doing a 2 tier how I would do it then as well. Do I do them separately then put the other cake on top? So many questions. Quite new to this and haven’t made a cake for a while. Best buttercream recipes as well please. Thank you. Low on money so I really need to make this myself lol. Ive already bought all the decorations for the cake.

Maderia is your best bet for freezing and stacking
Easy American buttercream is half fat to icing sugar (use proper butter and whip until pale before adding sugar) don't overwhip or you'll get bubbles you can add warm water to smooth it out and keep your knife/spreader clean, refrigerate in-between layers.
You can do Swiss buttercream if you want it less sweet but its more faffy.
Be aware of timing and weather as very hot a humid currently and not best for cake making.
If using fondant, don't refrigerate or itll sweat.
I've just made my sons tonight for his birthday on Saturday, will freeze and make second layer tomorrow freeze and decorate thursday/friday x

Also, when freezing make sure its wrapped tightly in cling flim and then a layer of foil you don't want any ice forming on the cake itself.
You can decorate whilst still defrosting, it will help to keep your buttercream chilled.
Again, don't let any condensation on the wrap get onto the cake or it'll go soggy
