Do y’all have tips for how to do a nanny trial? I want the nanny to start at the end of January. So far I have found 2 candidates that I like based on an initial video chat and a resume review. I would like for each of them to visit the house as a “final round interview”. Goal is to see the house, explain house rules / schedules, get a feel for how we vibe, meet our daughter, and maybe leave them with her for a few hours to see how they do. Then we’ll make an offer. I know it’s only November but I’d like to lock it down asap before we get into the holidays. How does this sound? Assume we pay them for their time? Anything else I should consider or do differently?

Yes, definitely pay her for her time.
The trial itself sounds good. Just make sure you leave time for the potential nanny to ask questions, because she's interviewing you as much as you're interviewing her.

It sounds more like a final interview than a trial, tbh. I'd definitely expect to pay for their time if it's longer than say, a normal 1 hour interview. I think that'd only fair because someone can be a great nanny and you just don't vibe or align on the house rules.
