So I literally cannot get my 8 week down to sleep before 11:30pm every night no matter how early we start our routine. We tend to do bath every second night but every night consists of feed, up to bed, into pjs, book, feed to sleep. We could start this routine at 7 and it would still be the case of not selling til 11:30.
She doesn’t nap during the day well, we get a 30 minute in the morning, and a 1 hour in the afternoon only if I’m out the house. She’s never distressed when she’s awake all that time, quite the thing being nosey and having cuddles. She’s EBF and her feeds all through the day are LONG and last from 30-45 mins each feed.
Any tips/advice recommended on how to get to bed earlier or just how to get her to sleep in general.

Hey mumma, I don’t have any tips but here to let you know my baby boy is the same, my boy is 16 weeks old and he still associates sleep at 11:00-12:00. It is hard but some babies sleep differently, don’t get caught up in it and just do what is working for you!

How long do they sleep at night? Do they wake up for feeds? What time do they wake up from night sleeping?

You said "feed, to bed, pjs, book, feed." How much time does this take? Seems like 2 feeds within like 30 minutes. Just from my interpretation, I'd say get rid of that first feed. Do pj's and book first then feed in dark quiet room then bed. Honestly at this young, you might want to do books during the day instead of bedtime as talking to them and eye contact can actually encourage them to stay awake longer so you're sending mixed messages

It’s actually a VERY normal bedtime for babies this age! I know you would think it should be earlier but they’re entering a phase of sleep regression. IT WILL PASS. It’s normal. I promise. As a parent who has experienced a lot of this and it’s not my first. Just don’t do any type of sleep training! It was confirmed to impact long term mental health.

Id say you are starting bedtime way to early for when they are ready to sleep but also I'd look at the wake windows cos that is not a lot of sleep overall and is potentially some of the issue.
