If vegan food choices I am vegan so I do the veg magazine , many different types of choices for veggie meals, and look online for your favorite people who are professional and just want use the ingredients you might have on hand and few you need to go to store for , but stay away from store frozen ones , why? Bc many ingredients not always healthy and salt and sugar and gum added so not good for your body or mind and you want be able to control that and eat healthy and your baby or your child will see that and they will be also , you are the role model for tomorrow brain development!

Stock wise you can get no salt stock cubes and just follow any normal recipes ☺️

Oven ready noodles
White sauce:
1c milk
6tbsp butter
6tbsp flour
Diced onion
Minced garlic
I also put goat cheese, italiano spice and 1tsp red pepper flakes (all optional, my mum uses ricotta instead of goat cheese)
1can of crushed tomatoes
2 jars of your favourite pasta sauce (or make your own with approx same amount)
Veggies (all bite sized pieces):
Grilled or roasted Peppers
Grilled or roasted eggplant
Sauteed onions
Sauteed mushrooms (personally love portabello)
My mum puts grill zucchini (not a fan, but also an option )
In a large baking pan (9x13 is a good size)
Pour 1/2 the can of crushed tomatoes (mix the rest with the pasta sauce)
Layer of noodles
Layer of pasta sauce
Layer of mixed veggies
Layer of white sauce
Layer of noodles
Layer of pasta sauce layer of veggies
Layer of white sauce
Layer of noodles
Layer of pasta sauce
Cover tin foil and bake 350 for 45mins
Uncover and top with mozzarella and Parmesan
Bake uncovered for 15 mins
Rest for 10-15 before serving

I made one recently with roasted Mediterranean vegetables. So nice!
