I am stumped! Lol!
My baby barely eats food, but I am trying really hard to introduce him to solids.
Need suggestions on easy quick meals for lunch/dinner!
He has 8 teeth btw..TIA

If you know how to make meat balls you can basically do the same with all cooked and mashed vegetables, other meats, fish, seafood, cheeses then freeze them so easy use. You just need egg or awuafaba to bind it for when you bake or fry it.
You can have veggie sticks or cucumbers on the side. Really easy to microwave courgette, aubergine, broccoli to steam them. Same with carrots and baked potatoes but those take longer.
You can make egg salad with a Greek yoghurt for a healthier option than mayo.
Bread with cream cheese mini sandwiches.
If you pre-made different sauces, freeze them in ice cube size blocks you can defrost them and add them to things like couscous which you can make super quickly, as a dip for bread, as a not so puréed puree (leaving some vegetables in there more chunks but cooked well so they’re easy)
Hope this helps inspire some ideas that work for you! I like to make a bunch of things and freeE them to make my life easier. (ABC muffins too)

Cubed tofu in a pan or air fryer! It’s my go-to. Squishy but they can still pick it up. I usually add a little sesame oil and a sprinkle of coconut aminos or low sodium soy sauce (can up the amount as they get older and can have more sodium)

the absolute easiest thing for me is eggs & avocado toast 😭 breakfast is my fav meal for him

omg i just noticed you said lunch and dinner

for dinner, i just give him whatever food i make for dinner and just cut or portion for him
