Heat:
3 tbsp (avocado) oil
Whisk in until smooth:
3 tbsp flour
1 tbsp chili powder
1 tbsp garlic or onion powder
1 tbsp black pepper
1 tsp dried oregano
1 tsp (sea) salt
1/4 tsp cinnamon
Whisk in until smooth:
3 tbsp tomato paste
2 c (beef) broth
1 tsp distilled white vinegar

Enchiladas-
1. Make filling
2. Wrap filling in flour tortillas
3. Line them up in greased casserole dish
4. Pour sauce over dish
5. Top with cheese
6. Bake at 400°F for about 20 minutes
7. Top with cilantro, lime, cream, etc.

My favorite cheap & healthy enchilada filling usually includes:
15 oz beans (black or pinto)
1 lb shredded chicken
1 red bell pepper
1 onion
1/2 c corn
