I think it’s good but you got to be careful with the food presentation. For example, nuts when they’re 1z you can’t offer nuts in its natural presentation (whole) until at least 3-4years old. Dairy not until at least 9 months and milk until 1. Butter until 12m. Yogurt until 9m. Cream cheese until 9m
I think you are better off with making your baby try the foods that you know your family eats, this being said, don’t offer salt or sugar before 1 at least. You can offer one food at a time.

I personally won't be doing all of these, for example I don't even know what Aubergine is (will be looking it up though) and we are holding off on Fruits until after she's had many vegetables and meats.
Like I love liver and things like that, and we are going to use a crock pot and blender and make her food at home (bone broth, meat and veggies, doctors said okay) start with the basic stuff and then move on to incorporating others over time. I don't want her having sweet things until a year old, I've seen too many kids become addicted to sweetness. She will have a large variety of things, and fruit will start being used mixed with other things just to help some of the not-so-great tasting things taste better.
I will also not be feeding her anything I'd not be willing to eat, just as a safe practice.

You said you take a solids class? Where do they offer that
