Mine was the same.
I've just swapped her to a maxicosy 360, which is a lot more adjustable.

Her head was also starting to come out the top of the car seat, too, but she's a loooong skinny miss, and the seat was only up to 1 year old.

That's a very common concern when you see their little legs touch the seat, but you have nothing to worry about.
​It is absolutely normal and safe for their feet to touch the back seat at 7 months, and it will still be safe when they are 1, 2, and even 3 or 4 years old. My 3 year old is still rear facing and her legs are bent, or she'll cross them.
​Car seat safety experts strongly recommend keeping a child rear-facing for as long as possible—ideally until they hit the maximum height or weight limit of their specific car seat (often up to 4 years).
​In the event of a crash, their legs are safer folded up this way. A young child's neck and spine are still developing, and the rear-facing position best protects them by spreading the crash forces across their entire back.
