Cheese and broccoli mini muffins, blueberry mini muffins, pinwheels (pesto and cheese, pizza style, broccoli and cheese), sweet potato pizza, sweet potato cheese biscuits, berry banana pancakes, mini loaves (berry, banana, cheese, carrot).
All can be batch made and frozen. Take out on the morning that you need, and they defrost by lunchtime.
I can share any recipes :)

Banana berry pancakes -
1 ripe banana - mashed
1 egg - whisked
2 tablespoons of self raising flour
Handful of berries or veggies
Mix together in a bowl until you have a batter. And cook in the frying pan until golden.
I tend to use frozen raspberries for these as they kinda crumble. Blueberries are good too as the squish. Mashed avocado and spinach (chopped) is a good savoury version too
