Yesterday our pediatrician said we could start purées or baby lead feeding. My baby is exclusively breast-fed. She’s already tried some foods, but now we can start with one to two meals a day. This is what my doctor recommends, any ideas for what to make with this??

We did eggs and butternut squash today, but unsure of what to cook for dinner and so on!

At first they won't eat much. Start with simple Whole Foods, trying not to introduce more than 1 thing at a time (in case of an allegory, you'd know what the culprit is).
It's truly okay to feed your baby 1 vegetable for dinner. As they start to eat more, give them more. But don't stress too much about making anything special for them right now. They might take one bite, and it would be a successful meal.

A favourite in our house is bulalo (bone soup). Both my son and daughter love it.
It's
Beef shanks
Onion
Garlic
Potatoes
Corn cob
Carrots
Napa cabbage (or bok choy)
Ginger
Peppercorns
Bay leaf
Beef Bullion cube (low sodium or leave it out you get enough flavour from the bones anyway, you can always adjust the salt level in your own bowl).
Serve with rice and spicy vinegar (if desired, my mum doesn't like the vinegar, but I love it).
I put the ginger, peppercorns and bay leaf in an infuser so I don't have to worry about biting into a peppercorn or piece of ginger.
If I can find them, I will also roast marrow bones and throw them in for extra flavouring.

I've found that it's easiest to just feed them whatever you eat. So assuming you don't have a bad diet then any meals you are having offer the same to your child but just be mindful that it's safe for them to eat and doesn't contain large amounts of salt or spice etc.

For my daughter, I serve it beef and veggies on a plate with the soup and rice in a bowl. She picks apart the beef and veggies and I do hand-over-hand with a spoon.
