Centre of excellence and New Skills Academy have tons of courses for good prices. Perhaps just going through the lists of what they offer might spark and idea for what you'd like to do.

I started 'little moments' art journal where I create simple art based on the little moment I had on the day, I told myself not to worry about having something on the book every single day, but the hobby kept me sane during lockdown. I'm on my 4th book.
