Get yourself a chopper the ones you press down with your hands because theyre great for finely chopping things with minimum effort. I say this because a great base for most dishes is finely chopped onion, carrot and celery its basically a kind if sofrito.
I use a lot of tinned tomatoes, theyre a great base for a lot of sauces that arent too complicated. And soo much garlic, but I love garlic. If you want simple cooking a lot of Italian recipes are a good starting point. Some are littally just oil, butter and different spices on pasta.

Chicken bouillon or knorr
Onion powder
Garlic powder
Paprika
Oregano
Thyme
Chicken broth
Diced onion, red pepper, bell pepper
Garlic
Olive oil
Avocado oil

Trust me, if you have carrots, onion, and celery in your home you can cook so many amazing things! It’s called mirepoix and I recommend you just get comfortable using those 3 vegetables in different recipes.
You can cook pastas, roasts, chicken, French, Italian, Mexican, everything!
And if I want tacos I omit the celery and add beef.
